Ingredients:  
2 c. whole blanched almonds
1 c. conf. sugar ( or blend 1 c. sugar with 1 T. potato starch in food processor)
1 egg white

Directions:
Directions:
Pulse almonds in food processor. Knead crumbly " dough" for a few minutes. Beat egg white. Add sugar. Mix into almonds. Roll into 1 inch thick ropes. Slice on the diagonal into diamond shapes. Store in an airtight container.
