1 large eggplant
3 large sweet potatoes
2 large green squash
Oil and salt

Directions:
Line 3 or 4 baking sheets with parchment paper. Spray cooking spray or sprinkle a drop of oil on parchment paper.Slice the edges off of the eggplant, wash and slice the eggplant across to inch thickness, leaving the black peel on. Peel each sweet potato and squash, and wash and slice. Lay the slices on baking sheets and drizzle a dot of oil on each slice.
Baking time: Eggplants and squash will be ready after 5 to 7 min. and may be turned for another few minutes.
Baking time for sweet potato is about 10 to 15 minutes. turn sweet potato slices over and bake a little more.
