4 lb. brisket (2nd cut is best)

⅓ c. brown sugar
2 T. seasoning salt
2 T. garlic powder
2 T. onion powder
2 T. paprika
2 T. chili powder
2 T. cayenne pepper-optional

Directions:
Directions:
Mix all ingredients. Rinse and dry meat with paper towels. Rub spice mixture on meat in pan, leaving excess at bottom of pan. Cover and bake @ 275º for 4-5 hours until tender and soft. Let cool; slice or break apart; serve.
