2 cups cooked long grain rice
3/4 cup raisins
2 cups milk
2 tablespoons butter
2 eggs
1/4 cup sugar
1/4 teaspoon salt
2 teaspoons vanilla
nutmeg or cinnamon

Directions:
Directions:
Preheat oven to 350 degrees. Lightly coat 2 - 3 quart baking dish with cooking spray. Place cooked rice and raisins in dish. In a medium mixing bowl beat eggs, sugar, salt and vanilla together and set aside. In a small sauce pan, gradually heat milk & butter to almost boiling stirring frequently to prevent scorching. Add hot milk to egg mixture stirring constantly. Pour combined mixture over rice and raisins. Sprinkle top with nutmeg or cinnamon. Bake uncovered 50 minutes. Serve with brown sugar and milk.
