6 eggs
2 Tbsp. water
dash of salt
dash of pepper
dash of paprika
1/2 lb. pork sausage
1 onion, finely chopped
1 Tbsp. butter
2 med. potatoes, shredded
Thymes leaves & parsley for garnish
red pepper for garnish

Start with the filling. In a large skillet brown the sausage, breaking into pieces. Add the onion & butter. Saute a few minutes until onions are tender, but not browned. Add the shredded potatoes.. Stir well & saute until the potatoes are tender. Beat the eggs, salt, pepper & water. our mixture over the sausage & potato mixture. Cook over med. heat. As eggs begin to set, push cooked portions towards center of the pan, allowing uncooked portions to run under. When eggs are almost set sprinkle with parsley & thyme.
