2 c. sugar
2 tbsp. vanilla
1 c. oil
2 c. grated zuchinni (remove seeds before grating)
1 c. crushed pineapple, drained
3 c. flour
1 tsp. baking powder
1/2 c. raisons (optional)
1tsp. salt
1 tsp. soda
pinch of cinnamon
pinch nutmeg
1 c. nuts (optional)

Directions:

Mix all ingredients together then bake 325 for 1 hour. Makes 3 loaves.
