1 1/2 c sugar
6 T cornstarch
Dash of salt
1 1/2 c boiling water
1/3 c real lemon juice (either fresh squeezed lemon or real lemon juice in bottle. Fresh is best)
2 t real butter
1/2 t lemon extract

Directions:
Directions:
Mix dry ingredients then add water and lemon juice. Cook until starting to thicken.

When starting to thicken, add 3 stirred egg yolks and cook until thick.

Remove from heat and stir in: 2 tsp real butter, 1/2 t lemon extract

Cool slightly and while still pourable, pour into 8" or 9" crust. Let finish cooling, then cover with my "best meringue" recipe.
