1 c. dried apricots, soak in warm water for 30 minutes, drain, snip into small pieces
1 c. sugar
2 T. oil
1 egg
¼ c. water from apricots
⅓ c. orange juice
½ c. chopped nuts
2 c. flour
¼ tsp. soda
1 tsp. salt

Directions:
Directions:
Mix sugar and oil. Add the egg, water and orange juice. Beat well. Add dry ingredients, apricots and nuts. Stir only to wet. Makes one bread size loaf or two smaller loaves. Bake at 350º for 1 hour for large loaf or 50 minutes for small loaves. Let cool in pan for 10 minutes before removing. Cuts better the next day.
