1 pkg. active dry yeast
2 T. warm water
3/4 c. warm milk
2 1/2 c. bread flour, divided
1/4 c. sugar
3 T. shortening
1/2 tsp. salt
1/2 tsp. nutmeg
1/8 tsp. cinnamon
1 large egg
Vegetable oil

Dissolve yeast in warm water in a large mixing bowl. Let stand 5 minutes. Add milk, 1 cup flour, and next 6 ingredients; beat mixture at medium speed of an electric mixer 2 minutes, or until blended. Stir in remaining 1 1/2 cups flour. Cover and let rise in warm place (85º), free from drafts, 1 hour, or until doubled in bulk.
Punch dough down; turn onto a well-floured surface, and knead until smooth and elastic. Roll dough to 1/2-inch thickness, and cut with a 2 1/2-inch doughnut cutter. Place doughnuts on a lightly floured surface. Cover and let rise in a warm place, free from drafts, 20 to 30 minutes, or until doubled in bulk.
Pour oil to a depth of 2 to 3 inches into a Dutch oven. Heat to 375º; drop in 4 or 5 doughnuts at a time. Cook 1 minute or until golden on 1 side; turn and cook other side until golden. Drain well. Dip each doughnut into White or Chocolate Glaze while warm, and place on wire racks, letting excess glaze drip off.
 

White Glaze

3 T. milk

Combine powdered sugar and milk in a bowl, stirring until mixture is smooth.
Yield: 3/4 cup
 

Chocolate Glaze

1/4 c. butter or margarine
2 (1-ounce) squares unsweetened chocolate
2 c. sifted powdered sugar
3 T. hot water
1 tsp. vanilla extract

Combine butter and chocolate in a heavy saucepan. Cook over low heat until chocolate melts, stirring occasionally. Remove from heat. Add powdered sugar, hot water, and vanilla, beating at high speed of an electric mixer until smooth. Yield: 1 cup
