3 tablespoons butter
2 medium zucchini, shredded
3 slices white bread
1 egg
1/2 cup shredded Swiss cheese
1/8 teaspoon pepper
1/2 teaspoon salt

4 chicken leg-thigh quarters
2 tablespoons honey

Directions:
Directions:
In a 2 quart saucepan over medium heat, melt butter. Add zucchini & cook till tender, about 2 minutes. Stir frequently. Remove from heat. Add bread torn into pieces, stir in egg, cheese, salt & pepper.

Preheat oven to 400º. Carefully loosen skin on chicken quarters by pushing fingers between skin & meat to form a pocket. Spoon stuffing into each pocket. Place in a 13 x 9 pan coated with cooking spray. Bake for 50 minutes or until fork tender.

Remove to warming platter, brush with honey and sprinkle with salt before serving.
