4 cloves of garlic, minced (or heaping tsp of prepared minced garlic)
1 Tablespoon of white wine
1 Tablespoon of honey
⅓ cup balsamic vinegar
1 Tablespoon chopped fresh oregano
4 tsp Dijon mustard
salt and pepper to taste

Preheat oven to 400 º F. Line a baking sheet with aluminum foil and spray with non-stick cooking spray.

Coat a small sauce pan with non-stick cooking spray. Cook garlic over medium heat for about 3 minutes until soft. Mix in the wine, honey, balsamic vinegar, mustard and salt and pepper. Simmer for an additional three minutes or until it has thickened slightly. Take out 2 tablespoons of glaze to reserve for a final glaze when fillets have cooked. Arrange up to 6 salmon fillets on the foil-lined sheet. Brush the fillets with balsamic glaze and sprinkle with the oregano.
Bake for 10-14 minutes until flesh flakes easily with a fork. Brush fillets with reserved glaze and serve.
