Ingredients:  
1 pound pastry ricotta (or regular ricotta and drain all the water from it)
⅔ cup sugar (if using regular ricotta then use powdered sugar)
drop of anise oil (not anise extract)
mini chocolate chips (as many as you like)

Directions:
Directions:
Mix everything together except for the chips.
Stir the chocolate chips into cream.
I use a small lunch baggie. I fill with cream and then cut the tip off to fill the canoli shell.

You can also use this as a dip. Break up sugar ice cream cones to use with the dip. You can also freeze the cream and use at a later time.
