Ingredients:  
2 c. spinach, cooked and drained
1 med. onion, chopped
2 T. butter
3 c. beef stock (bouillon cubes)
3/4 tsp. salt, or less
pepper to taste
1 1/2 tsp. flour
3 T. cold water
1 1/4 c. evaporated milk

Directions:
Directions:
1. Saute onion in butter until soft.
2. Blend flour and water to a paste and add to onions.
3. Add stock and seasonings.
4. Cook over direct heat, stirring constantly until it reaches a boil.
5. Add *finely* chopped spinach.
6. Add milk and reheat to scalding.
