1 lb of the sharpest cheddar cheese, grated or shreedded finely
10 Tbsp unsalted butter, cut into small pieces and chilled
6 Tbsp Crisco
3 cups all-purpose flour
1/2 tsp cayenne pepper
1/2 tsp salt
16-oz of pitted dates (the plumpest ones you can find are best)
whole pecans (two halves held together ), at lease two cups

Put flour, cayenne and salt in food processor and pulse once to mix. Add the. cold butter and shortening, then pulse 5-6 times. Add the cheddar cheese and mix. Place into a bowl, and let the dough rest at least two hours in the refrigerator.
The recipe must be made ahead up to this point: dough will last for several days refrigerated in an air-tight container. Remove the dough about 30 minutes before you want to bake the rolls.

Preheat oven to 350º
While oven is heating, stuff 50 dates with one whole pecan each.
Pinch off a walnut-size lump of the dough and flatten it between your palms, then mold it around one stuffed date, making sure to smooth out any cracks or holds. Repeat until all the dough is used.

Place the rolls on a cookie sheet covered with parchment paper or silicone baking mat.
Bake for 20-25 minutes until the rolls have a nice golden color.
Remove to a rack to cool.

This recipe came from a caterer after having raves at a cocktail party years ago.
It is easier to make than it sounds-- and worth every minute !!
