! lb Cheddar cheese, grated or shredded
2 lbs cream cheese (can use the lower fat kind but not fat-free )
1 small can chopped ripe olives. (1/2 cup)
2 large cloves of garlic, minced
1 cup chopped pecans
1/2 tsp salt
1/4 tsp baking soda
1/4 cup evaporated milk or cream
chopped parsley
whole pimentos

Directions:
Directions:
Mix all ingredients well except parsley and pimentos.
Shape into a ball. Roll into the chopped parsley and garnish with large strips of pimento to decorate.
Wrap in foil and chill.
Serve with assorted crackers

This can be made ahead and frozem for up to 2 months.

I used to make this for holidays and had marked it "excellent"
An idea for small groups or family would be to divide the mixture into two balls and freeze one of them until later.
