Ingredients: 1 cup Whole Wheat Flour 1 cup Krusteaz Buttermilk Pancake Mix 4 Egg Whites (discard yolks) 2 tablespoons Sugar in the RAW ½ teaspoon Pure Vanilla Extract (or your favorite flavor) 2 cups Non-Fat Milk 4 tablespoons Unsalted Butter, melted
Liquid cooking oil or cooking spray oil. If desired, fresh or unfrozed blue berries or other small pieces of fruit or even chocolate chips.

Directions:Mix flour and pancake mix in a large mixing bowl.
In a second mixing bowl, combine egg whites, sugar, Vanilla (or other flavor) extract, melted butter, and 1 cup milk. Using whisk lightly stir until all ingredients are combined and mixed well.
Pour liquid ingredients into large bowl with flour and mix. Use whisk or spatula to thoroughly combine ingredients. Add second cup of milk as needed to make waffle mix pourable - not thick and not overly thin (watery). Don't worry about small lumps.
Using small food brush lightly cover plates of pre-heated waffle iron with cooking oil or spray cooking oil. Brush until all parts of waffle iron plates are covered. Don't over-do with the oil as only enough is necessary to remove cooked waffles.
Cook until waffle iron alarm determines waffles are done to insure waffle are light and airy. Cover as desired with your favorite Pure Maple Syrup, jelly, commercial syrup, and/or fruit.

Notes: After several years of experimenting with waffle mixes and recipes, I have found this method makes the best "Tasty Light & Airy" waffles. These waffles are high in protein, sufficient carbs and low in total fat that provides an excellent "start your day" breakfast. OOSSHHDDNN!!
