3 tbsp. soil
1 lb mushrooms sliced
2 tbsp lemon juice
salt and pepper to taste
4 tbsp. olive oil
4 tsp red wine vinegar
1 medium clove garlic crushed
1/4 tsp dry mustard
pinch each of chervil, thyme and basil
1 1/2 lbs flank steak broiled and chilled OR
1 .b leftover roast beef, broiled beef or steak cut in julienne strips (3 1/2 to 4 c)
1/4 lb Swiss cheese cut in julienne strips (optional)
lettuce leaves
1 tbsp. minced parsley
cherry tomatoes

Heat 3 tbsp. oil in large skillet. Add mushrooms, lemon juice, salt and pepper and cook just until mushrooms are tender. Set aside and cool. In large bowl beat olive oil, vinegar, garlic, mustard, herbs, salt and pepper. Add beef, cheese and mushrooms. Toss lightly to coat and arrange on bed of lettuce. Sprinkle with parsley and garnish with tomatoes.
