1 Tbsp. celery salt (I have used celery seed)
1 Tbsp. kosher salt
1/2 tsp. pepper
3 lbs.beef brisket (trimmed) I have used other cuts of beef.
6 oz. tomato paste
2 cups frozen pearl onions (thawed)
1 bottle beer

Directions:
Directions:
Preheat oven to 325. Let brisket sit at room temperature for 30 minutes.
Combine salts & pepper, season both sides of brisket.
Brush brisket with tomato paste.
Place on large piece of foil, enough to enclose meat. Place inside roasting pan.
Add onions on top of brisket.
Pour beer around brisket.
Fold foil and crimp edges around brisket.
Place in oven for 6 hrs.

Slice, serve with onions & juices.
Great with mashed potatoes.
