Crust Ingredients:

1 C. Flour
5 tsp. Powdered Sugar
1/2 C. Margarine or Butter

Filling Ingredients:

2 Beaten Eggs
1 1/2 C. Sugar
3/4 tsp. Salt
1/4 C. Flour
2 C. Rhubarb (cut fine)

Directions:
Directions:
Mix together all crust ingredients and cut fine. Press into 7 x 11 pan and Bake for 15 minutes at 350 degrees.

Mix all filling ingredients and pour over the hot crust. Bake an additional 35 to 40 minutes at 350 degrees.

Serve with cool whip or ice cream.

I can still vividly see Grandma's garden adjacent to the house with the rhubarb in the corner. She contributed this recipe in 1991 for my 24th Birthday gift from my mom who knew how much I loved to cook and gathered recipes from family and friends. Boy do I miss them both! I think Grandma was 85 at the time and took the time to send a couple recipes. I was always amazed how she took the time to make each person feel special! That's love!!!
