4 tomatoes
mozzarella cheese, sliced
1/4 cup chopped fresh basil
1/4 cup chopped parsley
black olives, sliced
1/2 cup Vinaigrette Dressing
Freshly ground pepper

Vinaigrette Dressing
1 tablespoon Dijon mustard
4 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon ground pepper
Some minced fresh parsley
1/2 cup olive oil

Best when made ready to serve, but do not add the olive oil until the last minute

Have all ingredients at room temperature

Arrange tomato slices and cheese slices alternately

When ready to serve, sprinkle cover all the basil, parsley and olives.

Pour vinaigrette dressing over all

Sprinkle fresh pepper over all

Serve immediately.
