Lemony Bulgur Wheat and Barley Salad Recipe

c. Bulgar wheat
1 c. boiling water
c. barley
3 c. boiling water
2 scallions (green onion)
1 tomato
⅓ c. fresh lemon juice
c. fresh parsley (rinsed/dried) chopped
c. olive oil
salt and pepper to taste

Pour 1 c. boiling water over the Bulgar wheat, let stand until it reaches room temperature and the Bulgar is softened (about 1 hours)

Add barley to 3 c. boiling water, boil one minute then simmer for 30 (or until tender).

Drain barley and combine with Bulgar.

Cut scallions into thin strips and chop the tomato.

Combine all ingredients, add salt and pepper to taste.

Chill for at least 30 minutes, then serve.
