2 large eggs plus 2 lg. egg yolks
¾ c. sugar
⅓ c. lemon juice
⅓ c. orange juice
1 tsp. lemons zest
1 tsp. orange zest
Few grains salt
⅓ c. unsalted butter, chilled

Directions:
Directions:
In microwaveable bowl whisk together eggs and yolks to combine. Whisk in sugar, juices, peels and salt. Cut butter into ½" cubes and add to bowl. Microwave for 1 minute and whisk. Microwave for 2 minutes and whisk. Repeat 3 more times. Don’t overcook the mixture or it will become lumpy. Check consistencies for desired thickness. The mixture will thicken some as it cools. Pour into a heatproof glass container. Cover the surface with plastic wrap and refrigerate. Serve with scones or biscuits. Store in a canning jar in refrigerator.
