3 beaten eggs
3 T. vinegar
3 T. salt
8 oz. cream cheese
1 tsp. butter
1 diced green pepper
1 jar pimento, diced
1 medium onion, diced (optional)
salt and pepper to taste

Directions:
Directions:
Put first 3 ingredients into top of double boiler and cook until thickened. (I do this in the microwave, cooking for a minute at a time, stirring, and repeat until desired thickness. The mixture should be scoopable with a vegetable or chip.)
Add cream cheese and butter and blend well.
Add green pepper, pimento, onion (if using) and salt and pepper to taste.
Will keep up to 2 weeks refrigerated.
