2 c. milk
1 c. uncooked long-grain white rice
1 can (12 oz.) apricot nectar
1 c. whipping cream
2 T. powdered sugar
2 tsp. vanilla
1 c. snipped dried apricots
3 dried apricots halves
2 T. toasted, sliced almonds for garnish

Directions:
Directions:
Bring milk to a low boil in a medium-size heavy saucepan over medium heat.
Stir in rice; cover, simmer 20 minutes until rice is tender.
Turn rice into large bowl.
Gradually stir in apricot nectar; let cool (Most of nectar will be absorbed.)
Whip cream with sugar and vanilla until soft peaks form.
Fold cream and snipped apricots into cooled rice mixture.
Chill until served with garnish.
