Pastry for double crust 9 " Pie
2 cups water
1 1/4 cup sugar
2 teaspoons cream of tartar
20 whole soda crackers
Butter for dotting
Ground cinnamon (for sprinkling)

Directions:
Preheat oven to 375 degrees º . Line bottom of 9-inch pan with pastry. In medium sauce pan, boil water, sugar and cream of tartar. Add soda crackers and boil one minute. The mixture will be a little soupy but it will thicken. Spoon gently into pie shell. Dot the top with butter & add top crust. Sprinkle cinnamon on top crust and cut vents in top crust. Bake 35 minutes. Let pie cool completely , so it can firm up.
The crackers are the small, square ones with 4 sections to a sheet. Break each sheet into 4 crackers and stack until you have 20 total.
