3-4 BAKING POTATOES (ABOUT 3 LBS)
1 SMALL ONION MINCED
2 EGGS BEATEN
1/3 CUP MATZAH MEAL OR FLOUR
1 TSP SALT
1/4 TSP BAKING POWDER
DASH PEPPER
VEGETABLE OIL (FOR FRYING)

Directions:
1. GRATE POTATO INTO A BOWL OF COLD WATER. WHEN READY TO USE DRAIN AND SQUEEZE OUT ALL WATER.

2. IN MEDIUM BOWL COMBINE GRATED POTATO, MINCED ONION, BEATEN EGGS, MATZOH MEAL OR FLOUR, SALT BAKING PWDER AND PEPPER AND MIX WELL.

3. IN A LARGE SKILLET HEAT 1/2 INCH OIL OVER MEDIUM HIGH HEAT COOK PANCAKES 2-3 MINUTES EACH SIDE.
