1 carrot, coarsely chopped
1 tablespoon minced onion
3/4 inch young/spring ginger, peeled and sliced
1/4 cup rice vinegar
2 tablespoons vegetable oil
1 tablespoon sugar
2 teaspoons white miso
1/2 teaspoon sesame oil
salt to taste
freshly ground pepper to taste

Directions:
Directions:
Put all ingredients in a food processor.
Puree until carrot, onion, and ginger are minced and blend until smooth. If you prefer the dressing to be lighter, add water.
Store dressing in refrigerator up to a week.
