1 c. butter or margarine
1 c. granulated sugar
1 egg
1 tsp. vanilla
2 c. Gluten Free all-purpose flour
mini-chocolate chips
chopped walnuts

Directions:
Directions:
Preheat oven to 300. Bake in cookie sheet with sides.

In mixer bowl, cream together butter and sugar.
Add egg and vanilla; mix well.
Add flour one cup at a time; mixing well after each addition.
Place dough on cookie sheet; patting dough down to fill in cookie sheet.
Sprinkle mini-chips and nuts over top of dough; lightly press into dough.
Bake in 300 oven for 35-40 minutes.
Let cookies cool in pan; cut into bars.
Store in air tight container.

Variations: dates, raisins, assorted chips, chopped nuts and cinnamon sugar.
