Barbara Born

1 box yellow cake mix
1 cup water
cup vegetable oil
3 eggs
tsp almond extract
cup sweetened shredded coconut
1 cup caramel, plus more for drizzling
1 cups chocolate buttercream
cup dark chocolate chips, melted

1. Set the oven to 350F and grease a 8 square baking dish.
2. In a large bowl, combine cake mix, water, oil, almond extract and eggs, and mix well. Fold in cup shredded coconut, just until combined
3. Pour the batter into the greased dish and bake for 28 minutes, until the cake is golden and a metal tester comes out clean. Allow the cake to cool.
4. Using the dowel end of a wooden spoon, poke holes throughout the cake.
5. Drizzle 1 cup of caramel over the cake, allowing it to soak into all the holes you have created.
6. Spread the chocolate buttercream over the cake. Sprinkle the top with toasted coconut and drizzle with melted chocolate.
7. Break the Samoa cookies into bite-sized pieces and top the cake with them.
