6 boneless, skinless chicken breast halves (approx. 1 1/2 - 2 lbs.)
2 T. lemon juice, divided
1/4 t. salt
1/4 t. black pepper
1 cup of feta cheese crumbles
1/4 cup diced red pepper
1/4 cup diced fresh parsley

Preheat over to 350º.

Arrange chicken in 13x9 glass baking dish.
Drizzle with half (1 T.) lemon juice
Season with salt and pepper.
Top with the crumbled feta.
Drizzle the remaining (1 T.) lemon juice

Bake 35 to 40 minutes, until chicken is cooked through.
Sprinkle with diced red pepper and parsley before serving.

If you look at my recipe for chicken piccata (lemon chicken), this recipe is very similar, except for the cheese. This is definitely a quicker and easier way - or - you could make it piccata style, sprinkle the feta, and bake just until cheese is melted. Both yummy, but this one requires less handling of raw chicken. You could also substitute chicken tenders for the breasts.
