3 Eggs
1 tsp. Salt
1½ C. Sugar
1 C. Oil
1 tsp. Vanilla
2 C. Flour
¼ tsp. Baking Powder
2 tsp. Baking Soda
2 C. Grated Zucchini (unpeeled)
1 tsp. Cinnamon

1. Drain liquid off zucchini and mix all ingredients together.
2. Grease and flour one large cookie sheet.
3. Pour mixture onto sheet.
4. Bake at 350º for 15 minutes in preheated oven

4 oz. Cream Cheese (softened)
½ C. Softened Butter
2 C. Powdered Sugar
1 tsp. Vanilla

1. Cream butter and cheese.
2. Stir in vanilla, add sugar a little at a time.
3. Spread onto cooled bars.
4. Refrigerate when not serving
