25-pound turkey, giblets removed, washed and dried
1 1/2 cup honey
3/4 cup prepared yellow mustard
1 large whole onion, peeled
1 small whole onion, peeled

Directions:
Directions:
Bring turkey to room temperature. Stuff small onion into throat cavity, fold neck skin over and secure with wing tips. Stuff large onion into lower cavity and tie legs together. Place in roasting pan. Preheat to 450. Mix honey and mustard thoroughly and rub over turkey. Bake uncovered 1 hour [to kill all bacteria]. Reduce oven temperature to 170 and roast at least 1 hour per pound. Let rest 15 minutes prior to serving.
