Cheesy Chicken Enchiladas Recipe

2 lbs chicken breasts
1 large onion, diced
6 cups shredded cheddar or mexican blend
20 flour tortillas
4 cans enchilada sauce
1 can black beans, drained rinsed
1 7 oz can chopped green chiles, drained

Boil chicken 20 minutes, or until it can be shredded.
Combine chicken, cheese, onion, chiles, beans and 2 cans sauce.
Fill each tortilla with mix. Roll it up and place it in large baking dish with seams down
This makes two pans worth.
Pour one can of sauce over each pan
Cover with foil and label
Bake at 400 for 45-60 mins. until melted and bubbly
Add additional toppings/sides.
