3 avocados, halved, seeded and peeled
2 limes, juiced
½ tsp cumin
½ tsp cayenne pepper
½ medium red onion
1 jalapeno peppers, seeded and minced
3 large Roma tomatoes, seeded and diced
2 Tbls. cilantro paste (or fresh cilantro, chopped)
2 tsp minced garlic

Directions:

Scoop out avocado pulp. Add lime juice and mash or puree in food processor. Add remaining ingredients and stir to blend. Chill. Serve with corn chips.

Note: If you like it smooth, use a food processor to mash the avocados, but stir in the rest of the ingredients so there are vegetable chunks. If you like it a little chunkier, use a fork to smash the avacados.
