Effie's Divine Pecan Cake Recipe

Grandma had a neighbor named "Effie" when I was a small child. Recently, I picked up a book that had my grandmother's writing in it and discovered a recipe from Effie tucked into the back. Perhaps Effie had presented Grandma with a fresh cake and the recipe, as was a proper thing to do, however Grandma came to have this recipe, I'm very glad she kept it!

Preheat oven to 300º
Ingredients
3 C sugar
1 1/2 t cinnamon
3/4 t cloves, ground
2 C water
1 C apple cider, orange juice, bourbon, rum, amaretto, or other favored liqueur
1 # raisins
1 # dates, chopped
3/4 C butter
4 1/2 C white flour
1 1/2 t baking soda
1 1/2 T baking powder
3/4 t salt
3/4 C chopped pecans (this can be a rather flexible amount)
1/2 C light corn syrup
1 C pecans, halved (or more for decoration)
2 T of the same liquid as above

Directions
Combine first eight ingredients in a saucepan and bring to low boil while stirring continually. Reduce heat and let simmer 5 minutes. Remove to cool.

Sift together flour, baking soda, baking powder and salt.

Slowly stir (lukewarm) liquid spice/fruit mixture above into the dry ingredients. Pour into two well-greased loaf pans.

Decorate the tops of the loaves with pecan halves

Bake 1 hour at 300º

Remove from oven briefly, as you gently apply a coat of corn syrup over the cakes with a pastry brush (a few tablespoons of jelly or alcohol may be added to the corn syrup.) Return cakes to oven and continue baking one hour, or until a toothpick come out of the cakes cleanly. Cool.

A few tablespoons of the same flavor or complimentary flavor alcohol as the above liquid (Apple flavored vodka for apple cider; Cointreau for OJ) may be drizzled over each slice when served.
