3/4 pound (3/4 of a box) elbow macaroni, cooked to el dante
4 cups shredded cheddar cheese
1/4 cup cream cheese
4 cups heavy cream
4 tablespoons butter
1 tablespoon flour
1 tablespoon dijon mustard
Salt & Pepper to Taste

Cook elbow macaroni according to package directions to el Dante - drain and set aside.
In a large saucepan, melt butter over medium-high heat - whisk in flour, stir until flour is completely dissolved. Reduce heat to low - Add heavy cream, 1 cup at a time, stirring constantly so as not to scald the cream. Add dijon, stir to combine. Add cream cheese, stirring until fully melted and sooth. Stir in cheddar one cup at a time, stirring constantly until all melted and smooth - remove from heat. Taste - Salt & Pepper as desired. 6Stir in cooked macaroni until all is coated. Serve immediately.

* Feel free to add cooked bacon, green onions, left over ham or even cooked shrimp - This kind of stove-top mac-n-cheese can be a "blank canvas" for all kinds of add-ins!
