1 beef tongue
6 stalks of celery2 Bay leaves
1 large yellow onion
Water to cover tongue
Salt
Parsley,garlic
Oil and vinegar

Directions:
Directions:
Cut celery stalks in halfkeeping the leaves
Chop onion
Place tongue,celery and onion in a pot with water and cover tightly.
Simmer 2 1/2 to 3 1/2 hours until tender
Put tongue in cold water and remove the skin.
Chill
Slice tongue in 1/4 inch thick slices
Garnish with chopped parsley and chopped garlic (finely chopped)
Sprinkle with vinegar and oil
