1½ to 2 lb. chicken tenders or thighs cut into bite-size chunks
2 to 3 Tbsp. olive oil
2 Tbsp. chopped shallots
1 minced garlic clove
¼ c. tomato paste
½ c. dry white wine
1 tsp. salt
¼ tsp. black pepper
¾ c. chicken stock
bay leaf
⅛ tsp. dried thyme
½ tsp. dried basil
⅛ tsp. dried marjoram
1 c. sliced mushrooms
2 Tbsp. brandy

Dredge chicken in flour. Sauté chicken in oil with shallots and garlic until golden brown. Add the rest of the ingredients to the pot. Simmer for one hour.
Serve over medium or wide egg noodles.
