5 medium potatoes, cooked, peeled and cubed
1 small onion, chopped, divided
1 tablespoon chopped parsley
1/4 pound bacon, diced
2 tablespoons bacon grease
1 tablespoon flour
1/3 cup sugar
1/3 cup white vinegar
2/3 cup water
salt and pepper to taste

Directions:
Directions:
Mix the potatoes with half of the onion and all of the parsley. Saute remaining onion and bacon until golden brown. Drain bacon grease, saving 2 tablespoons in the pan. Add the flour and blend well.

Add the sugar, vinegar and water. Bring to a boil, stirring constantly. Add the potatoes, mixing well. Season with salt and pepper.

Note: It is best to let sit for 15 - 20 minutes before eating.
