4 cups cooked peeled and diced or ground fresh beets
4 cups grated cabbage
1 cup chopped onion
1 Tbsp prepared horseradish
2 cups white vinegar
1 cups sugar
1 Tbsp coarse pickling salt
tsp pepper

Directions:
Directions:
Combine all ingredients into a large saucepan. Bring to a boil, stirring often.
Simmer for 3 minutes. Fill hot sterilized half pint jars to within inch of top.
Place sterilized metal lids on hard and screw metal bands on securely.
For added assurance spoilage, you may choose to process in a boiling water bath for 5 minutes.
