2 lb. eggplant
1 T. minced garlic
2 T. fresh lemon juice
¼ c. tahini
1 tsp. coarse salt
¼ tsp cayenne pepper
Add-ins: 1 c. chopped kalamata olives, 1 T. zahtar

Directions:
Preheat oven to 425º. Cut stems off eggplants. Prick well all over with knife. Place on baking sheet and roast for 30-45 min. Turn at least once during roasting. When done (completely soft) remove from oven and cool to room temperature.

In food processor, purée garlic, lemon juice, tahini, salt, and cayenne to a smooth paste. Cut eggplant in half and scoop out insides. Add to mixture. Pulse until puréed.

Serve in bowl with chopped parsley around outside edge. Drizzle with olive oil. Put pistachios in center. Dust with paprika for color.
