1 cup Minute Rice
1 cup water
2 10 oz. pkgs frozen chopped broccoli
1/2 cup chopped onion
1 stick margarine
1 can Cream of Mushroom Soup
1 can Broccoli-Cheese Soup
1 small can of mushrooms (stems and pieces)
˝ cup cheddar cheese, cubed
1 sleeve Ritz crackers, crushed

Directions:
Directions:
Preheat oven to 350°. Cook broccoli according to pkg. instructions, drain. In 9x13 casserole dish, sauté ˝ stick of margarine and onions by putting it in the oven and cooking until onion is translucent. Add rice, water, onion mixture, water, soups cheese, and mushrooms; stir. Top with crushed Ritz crackers and dot the remaining margarine on top of Ritz crackers. Bake at 350° for 1 hour.
