Strawberry Bread Recipe

2 cups sifted cake flour
1 tsp. baking soda
tsp salt
cups sugar
1 tsp. ground cinnamon
cup skim milk
2 tbls. Vegetable oil
2 eggs, lightly beaten
1 cup chopped fresh strawberries
1 tbls. Cake flour
Vegetable cooking spray

Combine first 5 ingredients in a medium bowl, make a well in center of mixture. Combine milk, oil and eggs; add to dry ingredients, stirring just until moistened.

Dredge strawberries in tbls flour, gently fold into batter. Spoon batter into a 8 1/2x4 1/2x3-inch loaf pan coated with cooking spray. Bake at 350 for 53-58 minutes. Cool in pan 5 minutes; remove from pan and let cool completely on a wire rack.
