Ingredients:  
3 eggs
1 cup oil
2 cups sugar
3 cups zucchini ( shredded with skin on )
2 teaspoon vanilla
3 cups flour
1 teaspoon soda
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup nuts ( walnuts )

Directions:
Directions:
Beat eggs then add oil, sugar, zucchini and vanilla.
Mix together lour, soda, baking powder, salt & cinnamon. Add creamed mixture and mix well.
Add nuts.
Bake in 2 bread pans that have been greased & floured.
Bake 1 hour in a 325 oven or till done.
