1 Delicata squash, washed
1 or 2 sprigs Rosemary
1 shallot
Olive Oil
Salt and Pepper

Directions:
Directions:
Split the squash in half the long way. Remove the seeds.
Slice each half into 1/2" wide slices. Put in large bowl.
Add the sprigs of Rosemary to the bowl; do not chop.
Add a finely sliced shallot to the bowl.
Sprinkle the mixture with olive oil, just to lightly coat.

Cover the bowl and shake to distribute the oil.
Put vegetable mix on a shallow baking pan in single layer.
May add S & P.

Bake at 375 degrees Fahrenheit for 20-25 minutes.
The squash will be softened and lightly browned.
Discarded the Rosemary. Enjoy!
