2 eggs (separated)
3/4 cup sugar
2 tbsp.melted butter
2 teaspoons grated lemon rind
3 tablespoon all purpose flour 0r 2 tbsp. potato flour
1/4 lemon juice
1 cup milk

Directions:
Directions:
Preheat oven to 350F
Separate eggs placing yolks in medium bowl.
Sift flour and sugar together.
Add to beaten egg yolks. Add milk, lemon juice, melted butter. Stir till blended.

Beat egg whites until stiff. Lightly, fold them into the yolk mixture.

Place the batter in buttered custard cups set in a pan filled with 1 inch of hot water.

Bake for about 45 minutes until the top has a light crust.
Serve hot or cold.
