3 large sweet onions sliced thin
3 pears sliced
1TBS Olive oil
1 TBS butter
I c. Fig jam
1 TBS plus 1tsp cider vinegar
1/8 tsp salt and pepper
1 prepared pie crust1 egg beaten

Directions:
Directions:
Carmelize onions and pears in oil and butter for 30 min over medium low heat .Add in jam, vinegar, salt and pepper bring to a boil. Cook for 5 min. Cool . Take 1/2 of the mixture and purée. Spread purée on pie crust which has been placed on a parchment paper-covered baking sheet. Top with rest of mixture(un-puréed) leaving a 2 inch border. Fold border over edge of topping. Brush beaten eggs on crust .Bake at 450º for 15 -20 min .
Serve with goat cheese.
