12 oz bag of lentils
1 clove of garlic,minced
3/4 lb Italian sausage
1 large yellow onion
2 large carrots
1 8oz can tomato sauce
3T wine vinegar
Minced parsley

Directions:
Directions:
Heat oven to 350º
Wash and pick over the lentils;put into a 4 quart casserole dish
Add 4 1/2 Cups water and minced garlic. Cover and put in the oven
Remove casing from Italian sausage and cut into 1 inch chunks.
In a frying pan brown sausage and then add to the lentils using a slotted spoon.Return casserole to the oven.
In the grease from the sausage brown the chopped onion until limp
Slice carrots into 1/2 inch rounds. Add onion and carrots to the casserole.
when casserole has baked about 45 minutes, stir in the tomato sauce and 3 T of wine vinegar.
Stir well and return to the oven and continue cooking uncovered for 20 minutes.
Sprinkle with chopped parsley
