1 tablespoon cornstarch
1/4 cup sugar
1 cup boiling water
2 tablespoons butter
1 tablespoon grated lemon rind
1/4 cup lemon juice

Directions:
Directions:
Wash lemon. Grated the yellow peel (Only- no white)
Squeeze lemon to make juice. Set aside

Boil kettle.
In a small saucepan, combine: cornstarch and sugar
Gradually stir in boiling water.
Cook over medium heat stirring constantly until thickened. Turn heat to Low and cook a few minutes longer, stirring occasionally.

Remove from heat and blend in: butter, lemon rind, lemon juice.
Place in glass jar with lid.
