3/4 lb uncooked shrimp
1/4 tsp salt and pepper
2TBS lime juice
1 shallot chopped
1 tsp ginger root
1 tsp minced garlic
1 TBS olive oil
10 cherry tomatoes
1/2 c. Sliced mushrooms
1/2 c.chickenbroth
1/2c. coconut milk
1 tsp curry powder
1/2 tsp red pepper flakes
2 TBS cashews
2 TBS fresh Cilantro

Directions:
Directions:
Sprinkle shrimp with salt, pepper and lime juice. In a large skillet sauté shallot, garlic and ginger for 1 min. Add shrimp and cook for 2 min. until the shrimp turns pink. Remove shrimp from pan. Add cherry tomatoes,mushroom, chicken broth,coconut milk, curry powder pepper flakes and 1 TBS lime juice to pan. Bring to a boil, reduce heat and simmer 8-10 min. add shrimp back in. Heat through. Garnish with Cashews and Cilantro. Serve with rice
